Our Stonecutter Coffee is a rotating highlight coffee series - a tribute to the rich history of Deer Isle's granite quarrying industry that peaked in the early 1900s. These beans are selected for their "je ne sais quoi" and often come to us from unique coffee producing regions of the world and embrace inventive processing methods. Limited amounts available, changing frequently, and now packaged in our one of a kind Stonecutter 10 oz. coffee tubes!
These tubes are a new package adventure for us. Designed and hand drawn by Deer Isle local Farrell Ruppert, they feature the slabs of granite quarried out of Stonington. Made of 100% FSC certified paper, soy ink, with gold foiled accents and a sticker of the current origin inside. For every tube made, a portion of profits are donated to One Tree Planted.

We are partnering with Balzac Brothers as our supplier of these green beans. Balzac Bros has been a specialty green bean coffee importer for over 100 years. Founded in 1917, Balzac Brothers is one of the country’s top importers of green coffee. Their family has been supplying sustainable, specialty coffee for 4 generations. They source some beautiful, ethically sourced coffees.
Grown on the southern slopes of Mount Kilimanjaro, this estate has the ideal growing conditions for exceptional coffees. With volcanic soil, indigenous shade trees, and glacier-fed rivers, the coffee farm thrives. Focusing on the health of their coffees and their community, the Kilimanjaro Plantation ensures medical care, insurance, retirement plans for long-term employees, HIV training and testing, scholarships for local schools, and large investments in community projects. This estate strives to harmonize coffee, quality, people, and the environment. As a large coffee estate in Tanzania, the Kilimanjaro Plantation is aware of its environmental responsibility and has set the standards for being Rainforest Alliance Certified.
This coffee is a Honey Processed coffee where once harvested, the outer skin and pulp are removed, the beans are left covered in mucilage. This naturally occurring sticky protective layer imparts a honey-like sweetness to the beans, as if honey has already been directly added to your cup of coffee. The mucilage is left intact on the beans and spread in a thin layer onto raised drying beds, the beans are turned every 30 minutes (!) to ensure even drying and optimal quality in the final cup.
We really enjoyed roasting and cupping this coffee. We enjoyed the subtle sweetness we expected from the honey processing method throughout the roasting spectrum. Sweet and mildly fruity with a nice nutty note that came through in the medium and darker roasted temperatures, we settled on a medium roast of this coffee, getting notes of honeycomb, which is even noticeable in the viscosity, aka mouthfeel, of the coffee, as well as notes of ripe fig and walnut. The body becomes more silky with the addition of dairy if you so like.
