Stonecutter Series: Laos CPC Peaberry - NEW!
Our Stonecutter Coffee is a rotating highlight series - a tribute to the rich history of Deer Isle-Stonington's granite quarrying industry that peaked in the early 1900s. These beans are selected for their "je ne sais quoi" and often come to us from unique coffee producing regions of the world, embracing inventive processing methods, and/or out of this world flavor from small farms. Limited amounts available, changing frequently, and now packaged in our one of a kind Stonecutter 10 oz. coffee tubes! These are the coffees that currently excite us a micro-roasters.
These tubes are a new package adventure for us. Designed and hand drawn by Deer Isle local Farrell Ruppert, they feature the slabs of granite quarried out of Stonington. Made of 100% FSC certified paper, soy ink, with gold foiled accents and a sticker of the current origin inside. For every tube made, a portion of profits are donated to One Tree Planted.

Peaberry coffee is unique because peaberry beans are actually a result of a natural mutation inside a coffee cherry fruit, where one ovule fails to pollinate. Instead of the standard 2 flat-sided beans, the mutation is one single very round bean with extra space for development, as well as taking on all the nutrients and natural sugars from the fruit. Within this extra space, a larger, rounder, and sweeter seed/coffee bean grows. It is estimated that Peaberries make up around 5–10% of a typical coffee harvest.
Not all one-seeded beans can be defined as peaberries, as it’s possible for only one regular, flat-sided seed to develop inside a cherry too. Peaberries are usually sorted and separated by hand during the post-harvest process. They’ll either be separated by size using a sieve or, alternatively, sophisticated laser bean sorting machinery can quickly sort by weight and size. Peaberry beans are also considered to have a superior cup profile compared to regular coffee beans because of the higher percentage of sugars the one bean takes on; the beans fall more uniformly in the roaster as well, roasting more evenly because of their round shape.
